Ingredients



220ml vegetable oil
1 egg
1 tablespoon vinegar
salt & pepper to taste

Method



Crack egg into your food processor, add seasonings and vinegar. With your processor blade spinning on its lowest setting, add the oil a few drips at a time at first, and then allowing a very thin stream of the oil to pour in the top.
This will create a silky pale mayonnaise which will stiffen in your fridge. Scrape out with a spatula and store in a sterilised jar in your fridge.
Note: as this recipe contains raw egg it not advised to serve it to pregnant women.
